Set escrow preference

Record the escrow company the buyer chose for this transaction, exactly as the offer room's Use this escrow does. It is shown in the offer room only: it sets no email recipient and no contact (save the escrow officer with create_transaction_contact), and wiring and deposit instructions never come from here. It contacts nobody and sends nothing.
